I don't know if there is any solid proof, other than the 50 pound sitting on me now that wasn't sitting on me before I started eating carbs. Come to the Off-Track list and ask everyone why we've regained. If I remember my biology and nutrition classes from college, simple carbs convert to sugar quicker then any other food. If to much sugar is produced it eventually turns to fat to store for future use. It is not a good idea to have to much of a reserve of fat otherwise we become obese. I am sure this is probably simplified but you get the general idea. Looking back at my diet pre-surgery, I wasn't eating a lot of protein but I was eating tons of pasta, french fries, cakes, cookies, pies, bread, chips, pizza, etc. It was this food that got me in trouble.
