Guest guest Posted July 17, 2003 Report Share Posted July 17, 2003 This is my mother's recipe, but we could use sugar-free jello, ff cool whip or light cool whip, splenda, and reduced calorie vanilla wafers. It's a very light and good dessert Broken Glass Cake 1 Box Vanilla Waffers (crushed) 1 3 oz each of lemon, lime, cherry, orange jello or other jellos of your choosing 1 large container of cool whip 1/2 cup of pineapple juice 1/4 cup of sugar Use the lemon jello and mix with 1 1/2 cup of boiling water, 1/2 cup pineapple juice & 1/4 cup of or less sugar and let particially set and then whip with mixer then mix in cool whip The other 3 jellos mix sepeately with 2 cups of boiling water each and pour into separate pans so jello can be cut into small cubes. places about 2/3 crumbs on the bottom of a 9x13 inch cake pan. Mix cubed jello into lemon & whipped cream mixture. Dump in cake pan. Sprinkle the rest of the crumbs on the top. Refrigerate over night.
