When you use avocado, do you use extra virgin avocado oil? Do you use it in

combination with other oils? How does it taste?

Amber,Also try using 2 egg yolks to make it richer, versus the 1 whole egg. Also play around by adding more mustard powder. I also like it better using apple cider vinegar instead of the white or lemon juice.AmeliaTo: BTVC-SCD Sent: Mon, February 1, 2010 4:27:09 PMSubject: Re: mayonnaise

Thanks, Amelia. Sorry about starting the new post. I did a quick search, but I obviously didn't look hard enough. I'll try the sunflower, and hopefully it tastes like the store bought kind!

I actually haven't done it because it is really expensive and you have to

use a lot and it's not always easy to find. But people who do use it

usually rave about how good it is. Not to mention healthy. Much

healthier say than sunflower oil which I usually use.

Huh, now that I am reviewing maybe I should rethink my decision

- at least occasionally.

Yeah, that's why I was wondering. I never use mayo b/c I haven't found a recipe

that tastes good and is actually healthy. I tried half coconut half EVOO, which

was too strong. Let me know if you find a yummy mayo recipe using a healthy oil!

I was thinking about using butter, but never got around to it...

If you're more advanced into the diet and want to give this a shot, you can sub

agave for honey and probably the marcona almonds for regular almonds (I'm not

sure what the difference is) or maybe macadamia nuts:

Just to clarify, I think you meant, " substitute honey for the agave

syrup " because agave is not SCD legal.

I, too, have made mayonnaise with olive oil. Hate it. The olive oil is too

strong a flavor. Use a different oil that has no taste. I would try grapeseed

oil. I've often used it in making my own dressings. Its flavor is neutral. But

there are also other oils like cold pressed safflower or sunflower oil.

Walnut if you can find it is great.
