I used a variation of the Cheesy Coin techinique to make quick and easy square graham crackers...I hate the time involved in rolling dough... Make dough as directed, but before chilling form dough this way. *Quick Graham Cracker Squares: Form large ropes with dough, 3-inch diameter cylindrical shapes. Square off each to shape a long rectangular box shape (I don't remember the geometric term for this 3 dimensional shape). Wrap to keep from drying out. Chill. Cut into 1/4-inch slices to make easy square crackers. Decorate with cookie cutters by gently pressing until design is etched into cracker. Bake as directed.
