A nice touch, but a little more time consuming, is to whip the egg

whites first before you add them. It makes the pancakes so much

lighter with this GF flour.

> 1/4 cup dry dari-free

> 1 TBSP. Sugar

> 1 tsp. Baking Powder

> 1/2 tsp. Baking Soda

> 1/2 tsp. Salt

> 2 TBSP. Olive Oil

> Just enough liquid Dari-free to get the right consistency

> Mix dry ingredients first then add the wet ingredients (add little

amounts of liquid dari-free at a time). Whisk them together and cook.

We top ours with pure maple syrup.

> NOTE: I keep the dry ingredients pre-mixed in little baggies in the

fridge for really rushed mornings.
