Yes, in fact it is recommended that you remove one thing a week from the dairy/wheat/rye/oats etc list, to minimize the shock to the system of doing it all cold turkey. Sure, people do this all the time. If you gradually remove food items and replace with ones that are liked, it works, but beware that your child may replace one addiction with another. For example, there are children who never liked milk products until all the gluten was out of their diets, then suddenly began consuming lots of milk. My own son would eat dog biscuits when they were the only gluten or casein in the house. Hope this diet works for you as it has for us!
