First advice, change your brand of rice noodles and cook just until " al dente " (not soft, gives a slight resistance when bitten.) DeBoles and some other brands I tried, turned to mush easily. Tinkyada and Pastariso don't (I especially like the Tinkyada Organic Penne, which is great in cold pasta salads too.) I heard that Glutino's Dr. Scharf pasta is even better, but haven't tried my box yet. Second advice, make a " cream " sauce (a paste made with rice flour or sweet rice flour, seasonings, and fat-- Hain Soft Safflower Margarine, or oil and ghee if you use ghee, or whatever-- stirred over heat until thick, then add milk substitute. I have used Dari Free and Pacific Rice Milk, even vanilla flavor.) You may not need cheese, but if you do, Soymage Parmesan in a wet sauce will get a cheesy flavor, Tofutti is great too if your kids tolerate it. My kids like the buttery flavor of the sauce, and we no longer add soy cheese. But I do have kids who like herbs now, so I season the sauce with spices and herbs.
