I keep threatening to try some nut-milk yogurt! Surprise! Yeah, actually the gelatin made it work fine. I was mildly shocked but happy. So it's definitely edible. In fact, I just had some with sour cherries. This coconut yogurt is definitely better than the nut yogurt. Though, I never tried almond with gelatin.
