Not sure if I've posed this recipe before, but I'm eating it now and it's quite good! Here it is...http://www.recipezaar.com/Carrots-Theyll-Eat-30794?scaleto=4 & sys=eIngredients16 ounces carrots, scrubbed and sliced1/2 cup apricot jam **use homemade SCD legal apricot jam**2 tablespoons butter1 tablespoons lemon juice1/2 teaspoon grated orange zest1/4 teaspoon nutmegDirections1Cook carrots in boiling water until tender, drain.2Add remaining ingredients and stir to coat well. I made my own apricot jam, of course, using dried apricots, which turned out really well!
