I did not meausure the yogurt for exactly the reason you stated I did not want any bad bacteria to get into the yogurt. I just want to make sure I am doing this right before I give the yogurt to my son. The best incubation temperature for SCD yogurt is between 100F and 110F. I haven't had any problems with my Yogourmets, but some which were produced after 2005 appear to run hotter than that. Some people purchase a dimmer switch to reduce the power so the temperature stays in the proper range.
