Here are somer recipes that were posted previously- I always bake instead of frying- on L0ong Island New York **** I have a coating for chicken that tastes similar to the one used at Chick-f-let(sp?Sorry, it is early.) Anyway, it goes like this: 3 parts instant mashed potato flakes 1 part cornstarch 1 part garfava bean flour 1 part sorghum flour Salt and pepper Mix these in a bowl. Dip chicken piece in egg/Dari free mixture and then in dry ingredients and fry. I believe this is the best chicken recipe I have made so far. It is crispy and yet not hard like when using rice flour. ********* Preheat the oven to 425 degrees You take boneless chicken breasts (big ones) and soak (you can also use nugget size) them in Worcestershire sauce and jarred minced garlic (I use LOTS of garlic) Leave them in there while making the rest of the ingredients. Mix 2 tbs of milk (whichever sub you use -- I use Almond Breeze myself) 2 tbs oil, sprinkle some onion powder, 1/2 tsp garlic powder. Then in a separate bowl, take 2 cups of GF Corn Flakes (I use Nature's Path Honey'd Corn Flakes) and crush them or food process them. 1 tbs of chopped fresh parsley or 1 tsp of dried parsley, and a dash of ground red pepper (optional) Then take the chicken breasts, roll them around in the previous marinade, then dip them into the milk/oil mixture, then into the breading mixture and put them in a 13x9x2 glass baking dish. Bake for about 25-35 minutes.
