Guest guest Posted April 4, 2010 Report Share Posted April 4, 2010 ,Pizzelle is like a very thin, crispy, wafer/waffle that is slightly sweetened. It is of Italian origin, and is made with mostly egg, a bit of flour, flavorings/extracts along with brandy. When they come off the iron they are cooked, but still a little floppy, but they firm/crisp up after they cool. I love them and used to make them with my Dad (who is Italian). They are so addicting! I have an old stove top iron, but every time I tried to use it everything stuck to it. I don't like teflon/coated stuff, but I would consider a coated pizzelle iron. I have tried using almond butter instead of the flour and when I made the batter into crepes it worked well enough -- the crispy edges where just perfect.
