Guest guest Posted August 15, 2001 Report Share Posted August 15, 2001 The blend I use that uses exactly the flours you mentioned is: 1 part sorghum flour 2 parts garfava flour 3 parts cornstarch 3 parts tapioca flour I just throw all these into my KitchenAid mixer and blend it up really well. In fact, I use a " cup " as one part and find that my mixer bowl holds the nine cups of flours very nicely and store it in an airtight canister. This is the flour I use for my cookies and for my slight variation on the ANDI bread (aka Marci's bread). I just use 4 cups of this blend instead of mixing the rice, etc, like the recipe calls for . It's easier for me to do this than dig out all the different flours each time. I do use the premixed Bette's when I get in a bind and it works exactly the same as this blend (I got it from one of her books). Hope this helps! C.
