I just tried a recipe for Choc. Chip Muffins out of the GFCFDiet.com

cookbook--Gluten & Casein Free Cooking--and it was delicious. For those

of you that don't have the cookbook, I am posting that particular recipe

below:

Vivace, Proud 25.5yo w/Asperger's Syndrome & Dysthymia

Blessed Mother of , 6yo w/Autism, " Heaven's Joy, " and lots of

energy

Chocolate Chip Muffins by Nagla Moussa

1 c. brown or white rice flour (I used Bob's Red Mill White)

2/3 c. white corn meal flour (I only had yellow, and that worked fine)

1/3 c. potato flour

1/4 tsp. Xanthan gum

2 tsp. baking powder

3/4 c. turbinado sugar (or white sugar, which is what I used)

1 c. GFCF chocolate chips

Mix dry ingredients together well.

3 eggs (I was surprised how many it took--most of the muffin recipes I

have call for one, but great for extra protein)

1/2 c. coconut milk

1/2 c. water

1/3 c. oil

1 tsp. GFCF vanilla

Mix wet ingredients well.

Mix all ingredients together well; add more water if necessary to make it

the consistendy of a thick shake. Spoon into non-stick muffin tins.

Bake at 350 degrees for about 20 to 25 minutes (depends on your oven).
