I don't know about Charlotte. I ended up ordering some from Blue Seal Kielbasa on line. The shipping is considerable, but you can order in bulk and freeze it. Some people find that making SCD yogurt and dripping it is just as good. Expect hopefully steady improvement over time, but there can be some ups and downs too. Everyone is different. He did not get sick instantly and neither is recovery, but he should hopefully feel better over time. The important thing is to stick to the diet. Keeping a food diary will help him decide if he is tolerating a new food. I'm the cook and the person on SCD in my house, so I applaud you for what you are doing. It is a bit overwhelming to learn to cook in a different way all over again. I did not put my family on SCD, but our meals are usually SCD legal with an illegal side dish like rice, potatoes or noodles for the rest of the family. It's great if you want the whole family on SCD. With 2 year olds, you may want to transition though. They can be pretty picky. Look for time savers. Cook in large batches and freeze. Keep staples such as soups, hard boiled eggs,(if tolerated) beef patties on hand for quick snacks. I would make large batches of cooked apples and freeze them in small containers. I bought 2 yogurt makers so I don't have to make it as often. Some like to use a dehydrator for making yogurt in large batches. Over time, the cooking gets easier as you get used to it. He might find it easier if he discovers all the benefits this diet can bring him. The introduction diet should bring him some relief right away, then you add one food at a time, slowly…food that is very easy to digest as his body needs to heal. You’ll find lots of helpful information on these 2 websites: www.breakingtheviciouscycle.com www.pecanbread.com It is also important for him to keep a food diary and write down how his body reacts to different foods. Someone told me they carry it at Fresh Market so I'm going to call them. Surprisingly, my girls are doing really well. I just dove right in(that's just my nature) and they aren't complaining one bit. So I got very lucky with that. They never have been picky though. I wanted them on it as well because my father-in-law has Crohn's. That was just too much of a pattern setting up for me so I figured I would just put us all on it. I can't believe how good I feel on it after just a week. It gives me hope that it will help him. Thank you for the advice and support. I didn't realize how just making diet changes could make you feel so isolated and alone. Nobody really understands what you're doing and why you're doing it. He's out of the house from 6 AM-6 PM for work and is just so tired. I don't know if he has time for a food journal, but it's a great idea. We have a lot on our plate right now(he's considering a new job, we're getting ready to put our house on the market) and I think we can get a bit more organized once things settle down a bit. I haven't even had time to cry, though I feel like I'm going to all the time because I'm so overwhelmed with everything. It was bad enough feeling bad and then having to be on some diet that nobody else understood, and all the questions. We do understand. We've been there. Fast forward- the diet feels second nature, my family is happy to see me feeling better. It does get easier. Hang in there. Not all WF carry the DCCC. I looked in Chapel Hill and Durham and neither one had it. I even asked my local Teeter to order it for me and they could not. The DCCC is in some WF, so perhaps they would special order it. My MIL, dear lady and second mother to me as she was, never understood, and this was just with the hypoglycemia and allergy restrictions. If we went to Baskin and Robbins because she wanted ice cream, she would say in a bewildered tone, " But having just a little ice cream can't possibly hurt you! One thing you might want to consider is postponing some of thesevery huge stressful changes unless they are absolutely necessary todo at the moment.Your husband is out of the house 12 hours a day - stress from thejob and daily commute, then more stress and exhaustion and work from job huntingand house hunting and house selling and stress from big lifetime dietchanges Stress exacerbates symptoms and sometimes can cause them on their own. Several months on the diet, once his system has settled down some,it might be easier for him to have the energy to put into these changes. Just something to keep in mind. The reason he is exhausted is because he is working very hard ontop of being ill and having a faulty immune system which is not functioningthe way it should. And the fault immune system means that he is less likely to throw offother illnesses and things like deep exhaustion. Also, I agree with the person who suggested the epsom baths - maybeyou can persuade him to take them at night before bed - or at least onthe weekends.
