I love walnut oil. Sometimes I do half walnut and half safflower (all

safflower makes me nauseas). Extra light olive oil is good also.

I've seen hazelnut oil, almond and sesame oil in the stores but

haven't tried them. Not sure if that would be too strong. I like

lots of lemon and cayenne so as long as it's not overwhelming, ummm

Ray olive oil is good imho.

I tried making mayonnaise with EVOO several times, but I didn't like the taste of it. I ended up trying "mild" olive oil- (it wasn't organic or cold pressed, so I'm not sure how you feel about that), and I really liked it. I like EVOO on salads, but in the mayo it was way to strong and made it taste bitter. Maybe you can try and find a mild tasting olive oil?Thanks PJ, Kim and Amber (and others, I'm sure I'm forgetting someone) for your ideas! I would rather avoid the 'light' or 'mild' olive oils, but I might have to try one if I can't figure something else out. I've had a lot of recommendations for Colavita olive oil, and I think theirs is first cold pressed like you said, Kim, so I might try that. Ok, I just checked and my walnut oil is refined.  Spectrum.  They have unrefined peanut and other types on this website.  Actually, at the time I couln't find it anywhere online but I accidentally found it at WF. Sesame is good but a little goes a loong way.

My sister found some legal horseradish in Ohio and brought me a couple of

jars. I also use the Penzey's powdered horseradish. <g> We had to

have horseradish around, you know. My husband likes it on his raw

oysters.

That's why an Excalibur dehydrator is handy..... it sometimes takes

longer to dry, because of the climate, but it will dry

eventually.
