I have pecan meal in the freezer so I use that as obviously the first part of the chopping is already done. I do find I have to add a bit of oil and it doesn't come out as smooth as creamy nut butters, more like chunky. A FP works better, I understand, but I don't have one. It only takes a few minutes. Guest guest Posted April 8, 2010 Report Share Posted April 8, 2010 I toast the pecans first. Add them to the fp (before that I had a 1-cup chopper and they come out about the same). I add a little oil but really it turns to butter fast, I just add walnut oil to kind of thin it out and make it smoother. Either way--chunky or smooth is good. Sometimes I spice it up a lot if it's a small batch. I usually add medium cut salt also. Carrot cake muffins made with pecan butter and add extra walnuts--it's close to a brownie imho. It's very dry because they don't do anything to the pecans except smush them. That was very important to me since I'm so sensitive to contaminants.
