Don't be afraid to keep grinding. It took me three tries at almond butter to get it perfect because it seemed like an impossibly long time before the almonds started getting smooth. As soon as they would start showing signs of oil and it didn't look like flour anymore I would stop, but that was too soon. It's creamier if you let it keep going in the Food processor.

 

How do you get the nut butter to be smooth?  Mine is always rather chunky.LPR Acid Reflux

My pecan butter gets so that its almost liquidy in the cuisinart after a while, and I never add anything to it. Roast the nuts before and add some oil is my " secret " ..
