It's " Your Life In Your Hands " by Jane Plant.Here is a link with a review that breaks down most of what's good, and very much not good about the book. Not everyone agrees on that.I think the oft quoted phrase from the essenes is " let neither frost nor fire touch your food " .Best " When cheese is heated, the butterfat starts to melt at around 90 degrees Fahrenheit and the cheese softens. Then, as the temperature enters the 105 to 120 degrees Fahrenheit range, the cheese’s protein structure changes, and depending on what kind of cheese it is, it may begin to flow slowly like lava Woot! 118* is still raw.
