Basically, the liquid part is the whey (without the lactose). So, I guess if you really wanted to have a good protein shake you could drink the water although that would totally defeat the purpose of dripping the yogurt in the first place. I know zilch about beta casein, except that I remember that there are a couple of types. http://www.betacasein.org/index.php/pi_pageid/90 looks like a good place to start.
