I live in Toronto, Ontario, Canada, where I am able to buy some products made by Jodi Bager's www.jkgourmet.com (Jodi co-authored the Grain-Free Gourmet recipe books with Lass), such as frozen muffin loaves and some varieties of SCD granola. I have ordered some items from Digestive Wellness. My problem is that they ship using UPS, which charges extremely high fees for bringing anything across the US/Canada border. Given a choice, I would prefer to purchase from a company that ships via the US Postal Service, which charges much less for cross-border deliveries. A Toronto store at which I sometimes shop used to sell ground pecans, likely similar to the pecan meal you purchased from Digestive Wellness. I have been using this product to bake Lois Lang's Luscious Bread (recipe in BTVC). I like the taste of this bread much better than the result I get when I bake the same bread with finely ground blanched almonds. When I run out of the ground pecans, I will have to start making my own pecan flour, using my food processor. Currently, I use the food processor to convert raw pecan halves into pecan butter, as the starting point for baking "nut butter squash brownies" (recipe at www.pecanbread.com). Just sub it for almond flour, you'll see.MaraM,I too bought the pecan meal on sale-- languishes in fridge. wonder how it would be made into scd pecan waffles. Believe it or not, I've made the batter for my apple-pecan cake into pancakes. Don't currently have a waffle iron, so haven't tried it that way. I also always throw in an order of cookies when I get the flour, as a treat, to just once not have a whole baking production when I want to have a cookie. Only problem is they never last long enough! First time I tried the sample and fell in love with the butter cookies (I think that's their name, star shaped, great with tea!)
