And on the other coast, the people at www.TheSmokery.com cure their wild salmon with honey.  It's the best smoked salmon I've ever had.  Pricey, but worth it. He also sells at the Portland (OR) Farmer's Market on Saturdays.

That is, according to the ingredients it is legal - no sugar, just salt. I haven't called

about it - but had no problems with it and it's much better than TJs smoked

wild salmon and not much more money.

They make a point of pointing out there is nothing but smoke, salt and

salmon in the package.

And I've found that - where smoked salmon is concerned anyway - there

seems to be truth in packaging. That is, I've never had a problem with a

smoked salmon that had a similar ingredients list. The other brand is

Spence - a few of their items have no sugar listed and I've been fine with

them.
