coconut yogurt- different brands

So I find that if I use different brands of shredded coconut the yogurt comes

out different.

Now I have one that is far less tangy (the yogurt feel) which has happened with

two other brands. The only brands the tang is bothered by is the TT and the one

that Lucy sells which is the one sold in Whole Foods.

Should I be using more starter or sweetener for these other brands? I mean it

happens I run out and I can't find the one at Whole Foods or my health food

store.
