Hey Karianne! I believe you can use any kind as long as it is light and clear

(none of the really dark ones). So, for example, clover, wildflower, lavendar,

rose... any of those are OK. And raw is okay after at least 3 months or when

your D has subsided.

But read the ingredient label because it should say:  honey.  Believe it or not, I've read some labels that have more than honey added.  I would avoid raw for awhile.  It caused me so many problems (but to each their own) that I only cook with the so-called good stuff that's raw, organic, etc.  My allergies, etc.are bad enough.

Have never had problems with D ;)

I don't know if I do tolerate honey. Have not tried for 18 months but I wanted

to give it a try because I want something sweet with my kabocha squash.

But maybe I could start to marinade chicken with some honey because then it get

heated :)
