Guest guest Posted November 26, 2009 Report Share Posted November 26, 2009 OF COURSE!Crust---1 Pillsbury refrigerated pie crust (from 15 oz box) softened as directed on boxStreusel---1/2 cup crushed gingersnap cookies (9 cookies) 1/4 cup chopped pecans 2 tbs packed light brown sugar 2 tbs all purpose flour 2 tbs butter or mgn softenedFilling---1 can 15 oz pumpkin (not pumpkin pie filling) 1 cup evaporated milk 1/2 cup packed light brown sugar 2 tsps grated fresh ginger root 1 tsp pumpkin pie spice 1/4 tsp salt 2 eggs slightly beatenTopping---2 to 2 1/2 cups miniature marshmallowsHeat oven to 425 and place cookie sheet on center rack in ovenUnroll pie crust in 9 inch glass pie plate. Mix streusel ingredients in small bowl then sprinkle over crust lined pie plate.Mix filling ingredients in bowl and pour over pie on top of streusel.Bake 15 mins @ 425 then reduce heat to 350 and bake for 35 to 45 mins or longer until knife inserted in center comes out clean. Cool on cooling rack about 3 hours.Before serving spread marshmallows on top and broil about 30 seconds until lightly brown.Cover and refrigerate if there are any leftovers (LOL)Hope you'll try and enjoy....Happy Thanksgiving.
