The vanilla ice cream at http://nomorecrohns.com/desserts.aspx is my fave! I use

1/2 and 1/2 for the yogurt, and it's creamy goodness :-)

After the honey/egg mixture has thickened and is still hot, add the butter to it

and mix it in. I don't know why she says to add the butter to the cold mixture,

because like you said, it will just get chunky.

Yes, you need to either whisk constantly, or use a double boiler.
