They usuly contain sugar and/or citric acid and is illegal.

All the brands I have looked at have illegals in them.

Great idea!

I ve never bought anchovies until last week. I bought some that looked really

good. I buy organic everything but didn t for anchovies. What s the benefit?

Maybe notfarmed? I have no idea on this one.

Amelia,Not that I put complete stock in an organic label, but it is something I consider. If it doesn't have illegals is the main thing. If you use a lot, investigating the brand and how they are raised would be good, but if it is a small component of your diet 'regular' would be o.k. Yes, and I've been eyeing some of them. I *THINK* I have a recipe for

oyster sauce, but haven't had a chance to kitchen test it properly. Fish

sauce has also been on my list of possibilities, since I do like Asian

food.
