The above is interesting. It is rather concerning that 24hrs of incubation reduces the probiotics although they don't say whether some, most or all are effected. It should be noted that the information was provided by their laboratory manager.Hi Steve,This is from Elaine: "I just received a lab report about the difference in the numbers(CFU's)(colony forming units) of bacteria in 12 hour fermented yogurt and 24hour fermented yogurt.In 12 hour fermented yogurt - Average CFU's was 65 million/gramIn 24 hour fermented yogurt - Average CFU's was 470 million/gramBoth of these tests were done on unpasteurized goat's milk using the same probiotic."Elaine had these tests done a few years before she died and I'd rather believe her since the 24 hr yogurt does help us.Take care,Pat

Well, first of all, they're citing their CBA starter, which is not the

starter we use.

And yes, the pH does change -- that's what causes the yogurt to thicken.

You're going one step beyond pasteurizing the milk when you heat it to 180F+ and then cool it down anyway. So, if you start with pasturized or not, it doesn't matter because in the end you'll have the same result. Ohh, I guess I misunderstood the unpasteurized part. I thought it meant that they actually used raw milk, and didn't heat it to 180 at all. My bad! The fact is that we rightly spend a lot of time making sure that all of our

supplements are free from any disaccharide and polysacharide carbohydrates yet

it seems that our yogurt still contains some lactose and equally if Yogourmet's

2010 laboratory state that probiotics have problems with high acidity that

results after 24hrs of incubation then perhaps this is something we need to take

on board, particularly those who struggle with consuming yogurt.

Some people ferment their yogurt for 24 hours as recommended, then add a

suitable amount of Lacteeze drops, stir well, and place in the

refrigerator for an additional 24 hours.

Are these lacteeze drops located anywhere at local stores?  I've searched everywhere, even WF and can't find them.  If they are only available online, pls let me know.

I don't know if they're available in YOUR local stores.

For on-line, just search on " lacteeze. "

http://digestmilk.com/lacteezexl.html is one site I've heard

of, although I cannot recommend them personally, as I have not bought

from them.

Which probiotics are in the sample they discussed, since they don't use the one

we use?

Also, acidophilus does not have problems with acid - the very name means acid

loving.

Thirdly, if you are having problems with dairy yogurt, make coconut yogurt.

There's been enough

discussion of it lately. No lactose and recipe is in the files.
