Garlic and onion powders often have illegal additives.

" Cure " for sausages means the nitrates and nitrites put in

things like pepperoni and other hard sausages to keep them from going

bad. A common cure is Morton Tender Quick, which does contain

illegals.

If he is adding just spices, not spice mixtures, and mixing it up and

smoking it, it may be okay.

Be sure that there is no sugar, starch, gums, or other illegals.
