" Cure " for sausages means the nitrates and nitrites put in things like pepperoni and other hard sausages to keep them from going bad. A common cure is Morton Tender Quick, which does contain illegals. If he is adding just spices, not spice mixtures, and mixing it up and smoking it, it may be okay.
