Guest guest Posted May 14, 2010 Report Share Posted May 14, 2010 Alyssa I routinely use applesauce as a sweetener in muffins and breads, as my body doesn't tolerate honey. I usually substitute equal amounts of applesauce for the honey listed in the recipe, but then increase the flour to compensate for the extra moisture. Sometimes I just start off with a 1/4 cup of applesauce without looking at what amount of honey the recipe called for, and adjust dry ingredients as needed and adjust flavorings as needed. I will also use fruit juices as a sweetener instead of applesauce, but then I have to add even more flour to compensate. To tell you the truth, I rarely use a recipe for nut flour muffins or breads anymore. I just throw ingredients together looking at the batter texture to determine what I need to adjust without paying any attention to amounts of ingredients. Just not sure how to go > about it =) Thanks! > > Alyssa, This is a recipe from Monika who says these muffins remind her of chocolate muffins in look and taste. 2 cups pecan flour (she used sunnyland farms) 1 cup almond flour 1/2 cup apple sauce or honey 1/3 cup melted ghee or butter 2 large eggs 1 tsp baking soda 1/2 tsp sea salt In a food processor put eggs, butter, apple sauce, baking soda and salt. Process until mixed thoroughly. Add nut flour and process till flour is incorporated. Scoop into muffin tins and bake at 350F for about 25-30 minutes. I will just start off doing like you said with equal amounts substituting sauce for honey, and then see how it goes.
