I didn't notice if you said how old you children are. Mine are 2.5 yrs old

and have adjusted well to " waffle " peanut butter and jelly sandwiches. I

multiply my waffle recipe by 6 when I make it. That usually lasts me just

over a week. Under cook them a little when you make them. I freeze them as

soon as they cool. If you take them right out of the freezer and put them

into the toaster they turn out pretty good. I have found that if I under cook

them a little in the waffle iron that they don't become bricks so easily.

And, if they are bricks we have peanut butter & jelly waffles on a plate with

syrup. talk about sweet. :) my kids love it!

Other quick things we have are oscar meyer hotdogs, hormel pepperoni, Quaker

mini apple cinn rice cakes, rice crackers, any Del Monte fruit or veggies are

approved.

I also make lots of chicken nuggets when I make them and greeze them. Many

Walmart and Orieda brand french fries are safe. Those together with a canned

veggie makes a emal for my kids.

I bought powdered calcium from Kirkman's. i add this to about anything I

cook or bake.

My kids also like " tuna dip " ( call anything dip & they will eat it.) Which

is just tuna fish salad with crackers.

Rice pasta with meat sauce is also becoming very popular in our house. I

swore I was NEVER going to pay $3 for a bag of pasta, but after trying to

make my own $3 is not a bad deal. :)

Hang in there. It gets better. We are only about 8 weeks into the diet and

are doing pretty well. My husband works full-time and I am home with the

girls, but I also hate to cook. My husband and I eat a lot more salad than

we used to. The girls won't eat salad yet & he & I don't eat hotdogs. So

when the girls have a " thrown together " meal DH & I add some pepperoni or

left over meat to our salads and WALA, dinner.

I've never confirmed, but according to my celiac sister Tyson precooked

chicken-(not breaded, there is a whole chicken, a breast or drum sticks) are

gf. They freeze well and I can just defrost at the last minute as needed,

also I just called and steak-ums are gf. They cook in seconds. I also pop

open canned lima beans, carrots, corn, etc which they think is finger food,

although I'm moving to organic to avoid pesticides and lead in the can. Oh

no, I may have to use a can opener! I also get the individual frozen chicken

pieces from Trader Joes and just cook them in any sauce - tomato, pinapple

salsa from Trader Joes, throW in frozen veggies and serve over minute rice.

I'm almost embarressed to confess I'm such a gourmet chef (haha) but my kids

will eat anything and my husband just goes out for chinese if he has politely

eaten a little burt needs a meal. Helene

Make a pasta/chicken salad-

cook any gfcf pasta (I use lentil bean pasta), add chiccken (good way to

clean off the bones from a roasted chicken), and some GFCF mayo,

refrigerate and VOILA!! LJ loves this. If you eat tuna, you can use

tuna instead of chicken.

Also Applegate farms has GFCF sliced deli meats that are GFCF.

Hi ,

What works for me are meatballs, Chicken nuggets, applegate deli

meats, Mccains 5 minute french fries. I make the meatballs (throw

organic mix vegie baby food, flaxseed powder, calcium powder, any

thing else you want in) and nuggets on the weekend and freeze. Just

heat and serve. Good Luck...

We use the " Palmer's " Cocoa butter lotion. It sells for cheap at

Walmart. It is kind of thick and smells good. Doesn't taste like much

of anything, and the ingredients seem pretty harmless.
