Or want a fabulously rich desert object. 1:2 (coconut:water) or 2:3 (coconut:water) are more normal ratios, IME. Mara > Quick Coconut Milk Recipe from " Eat Well, Feel Well " by Kendall Conrad, pg. 195 > > Makes 1 cup coconut milk > > Ingredients: > 1 cup unsweetened coconut flakes > 1 cup water > > Directions: > Bring 1 cup water to a boil. Combine boiling water and 1 cup unsweetened coconut flakes in a blender or food processor and process until very fine. Strain through cheesecloth or fine sieve, pressing to extract all liquid.
