1:1 is a very, very rich coconut milk. Though that is great if you need fat or

want to gain weight quickly. Or want a fabulously rich desert object.

1:2 (coconut:water) or 2:3 (coconut:water) are more normal ratios, IME.

> Directions:

> Bring 1 cup water to a boil. Combine boiling water and 1 cup unsweetened

coconut flakes in a blender or food processor and process until very fine.

Strain through cheesecloth or fine sieve, pressing to extract all liquid.
