On my gallon jug of eggwhites there are no additives listed. As for the Avidin, it is neutralized through the heat pasteurization (http://www.eggwhitesint.com/healthfacts.htm) The texture is not bad, not really too slimy but definitely not like milk either. For breakfast, I pump the 8 oz of egg whites (8 squeezes of the pump), 3 tablespoons of homemade SCD yogurt, a little bit of honey, and whatever fruit I have around and throw it all in my blender. It makes a delicious shake. I have also just mixed it with SCD legal juice (just the whites and juice) and that is good too, and quick. I have been using them for over a week and am tolerating them very well, no reactions. I would love to try the bison or ostrich but I can't say I have seen it around here in Plainfield, IL. I was so afraid last August when I started SCD diet that it would not work and that I would not be able to stick with it. But when it was one week until school started (I am a high school science teacher) and I was in the bathroom every half an hour, the worst my UC had ever been, I found the SCD info, got the book, and have stuck to it since. I think I have only missed one school day this past year because I was too sick to go in. I am looking forward to the summer because I will have so much more time to experiment with SCD recipes and try to get my 9 year old daughter to eat more healthy too. I am into bodybuilding and have been looking for a protein shake substitute for ever since I gave up my whey isolate. It has been hard trying to get in 100 g of protein per day on SCD. These liquid egg whites claim to be as smooth as drinking a glass of milk, and pack in 26 g of protein per 8 oz. with no fat or cholesterol. This would be convenient because I can just fill up a mug and go. Its fat content is minimal -- and in any case, you really ought to read the Weston Price information on healthy fats.http://www.birdbrai nranch.com/ nutrition. php shows that three ounces of ostrich has 22 grams of protein and minimal fat.The texture of uncooked egg whites as a drink would be... well, slimy comes to mind -- and eating large quantities of egg whites by themselves isn't good because uncooked egg white has avidin in it, which binds biotin, an important member of the B vitamin family.I make what I call "savory smoothies." My base is some steamed, peeled zucchini, 6 ounces of tomato juice, a few pinches of whatever seasonings I feel like, and a 3-4 ounce chunk (chopped) of cooked red meat. Whir in blender, pour into a mug, and go. If you have your ingredients already cooked, making the smoothie is fast and easy.I am always bemused when people tell me that without protein shakes or other unbalanced diet schemes, they can't get enough protein on SCD. Our paleolithic ancestors were body builders and on the go in a fashion beyond our wildest dreams because they had to run down the protein before they could eat it. I'm glad SCD is working well for you.
