No, sure haven't. In fact, one of my best combos is avocado mayonnaise

and chopped chicken for chicken salad.

In fact, one of my best combos is avocado mayonnaise and chopped chicken for chicken salad.Hey Marilyn! Would you mind telling me EXACTLY what you put in this? I know chicken salad should be something you can just throw together, but the last few chicken/tuna/salmon salads I've attempted haven't been very good... I'd especially like to be able to make a yummy one with avocado, since I don't like avocados very much and would like to be able to eat more of them.Thanks!! I'm posting both my avocado mayonnaise recipe and my chicken salad

recipe. I just sub avocado mayo for the regular mayo in the chicken salad

recipe. Obviously, 6 avocados will yield more than one batch of

mayo.

One advantage of the avocado mayo is that it freezes just fine, so you

can make up a large batch and freeze it, and then just defrost a cup or

two at a time, as needed.

Ah, but you're moving to India! Which sounds so exotic and exciting!

(Highly recommend " Culture Shock: India " as a read before -- or

on your way there!)

Besides, we're trying to get things fixed up around here... something to

do with being pack rats and in the same house for 34 years.
