As I get a routine down I am going to save the shreds for my friend to feed his chickens but I was wondering if there is something I can do with it? It may have stuff in it that the chickens can digest, but you've gotten most of the nutrition out by making the coconut milk, and what's left is nothing but fiber. They are great in meatballs/meatloaf as a sub for breadcrumbs. Much, much better than almond meal. Also, you can roll the meatballs in them and the meatballs come out really nice that way. Also, you can use them to coat chicken breasts - I use the shredded coconut, almond meal and sesame seeds in a 2:2:1 ratio. Also, add it back into smoothies. What's too much for you might not be for some one else.
