Guest guest
I use them in kraut and just a couple of other things (just like my mom) for flavor. We do not eat them but they are cooked in for flavor. Great flavor and not sure I'd eat something like sauerkraut without it. Anyone know for sure if they are illegal? Debbie 40cd Juniper berries, used to flavor gin, according to this web site, are high in resin. http://www.ars-grin.gov/cgi-bin/duke/farmacy2.pl RESIN Fruit 80,000 - 100,000 ppm DUKE1992A http://botanical.com/botanical/mgmh/j/junipe11.html ---Constituents---The principal constituent is the volatile oil, with resin, sugar, gum, water, lignin, wax and salines. The oil is most abundant just before the perfect ripeness and darkening of the fruit, when it changes to resin. The quantity varies from 2.34 to 0.31 per cent Juniper Camphor is also present, its melting-point being 1.65 to 1.66 degrees C. I personally would not recommend juniper berries as a spice, just because of the resins and gums and lignins in them. I can’t tell if they are specifically illegal, but I wouldn’t eat them. Someone I know suggested them to me as a spice in a recipe and I couldn't find them on Elaine's legal/illegal list. A search on these forums didn't turn up anything either. Thanks! Guest guest
Maybe one of the moderators will know. Perhaps it’s a case of ok to use as flavoring, but not recommended to eat the actual juniper berries. Guest guest
It's a berry. I thought all berries were legal. Anyway, no one eats juniper berries in quantity. A few flavor an entire dish. Guest guest
I hadn't planned on eating them, they would just be for spicing in small quantities. I probably try them out and play it safe for a few days after and watch for a reaction. Thanks for the advice everyone. ~CD, SCD 02/21/2010 On Wed, Mar 31, 2010 at 11:28 AM, Wizop Marilyn L.
