I refuse to use the 'modern day' oils, or refined oils, and the other oils that I'm left with have rather strong flavors. I think an olive oil mayonnaise would be good if I could fine an EVOO (extra virgin olive oil) with a really nice, preferably mild flavor on it's own. Anyone have a favorite EVOO they can recommend? THanks! That's one of those that I consider a 'modern day' oil. The only oils I"ll use are animal fats and virgin oils of nuts or fruits, like coconut, avocado, macadamia, olive, etc... Sometimes a little avocado oil to the olive oil adds flavor too. Guest guest Posted April 1, 2010 Report Share Posted April 1, 2010 Alyssa I don’t make mayonnaise (my digestion refuses to tolerate it), but for cooking I use an EVOO that doesn’t have a strong olive taste. I get several brands, but they are all EVOO, first cold-pressed. The first press label is a critical component to finding an EVOO that is light in color and without a strong taste. That is what I look for when I’m searching for an olive oil – extra virgin olive oil, first cold press. The brands I like best happen to be Italian imports, but I have tried other brands that were OK as long as they were first-cold press. My favorite EVOO of the moment is Lucini. I find it in one or two of the local grocery store chains, and in my local health food cooperative. I get the 500ml size. It is somewhat expensive but not outrageous, and it lasts me 4 or 5 months as I don’t or can’t eat much. Kim M. I ended up trying " mild " olive oil- (it wasn't organic or cold pressed, so I'm not sure how you feel about that), and I really liked it. I like EVOO on salads, but in the mayo it was way to strong and made it taste bitter. Maybe you can try and find a mild tasting olive oil? I have tried it and no one in our house could stomach it. It was probably the worst thing I've ever made. In my opinion EVOO with a mild taste is an oxymoron. My recipe has three tablespoons of fresh lemon juice and a full tablespoon of dry mustard and crushed garlic, and it never takes even a full cup of oil. I'm sure you are all cringing here, but I like it this way. The seasonings overtake the EVOO. It's a little strong to eat with a spoon, say, but it gives good flavor to chicken salad or lettucewiches, or whatever. Quote Link to comment Share on other sites More sharing options...

However, after I had mystifying results for quite a while with mayo that would thicken one time, and not another, I finally read that eggless mayo won't work in humid weather, a definite regular problem here in the northwest! It's much easier now to be able to use the egg. I make remoulade sauce (mayo with extra mustard, plus white pepper, Tabasco, and horseradish). One time, I had put th mustard, the pepper, the Tabasco, the horseradish in and started the blender whirring. I flat forgot the egg! And then I added in the oil... and it tasted fine. Came out fine. My skin feels wet and I'm not swetting. I have to get some of that expeller pressed coconut oil. I tried the regular a while back and my mayo tasted like coconut oil. Not was I was looking for at all in my tuna or egg salad <yuck>. I love horseradish! My sister found some legal horseradish in Ohio and brought me a couple of jars. I also use the Penzey's powdered horseradish. <g> We had to have horseradish around, you know. If I can locate it, I'll let you know. Yes, I can imagine meringues wouldn't care for your humidity either! I'd be interested in where you read about eggless mayo failing in humid weather.
