" Riced " Cauliflower Directions

Ingredients:

1 head cauliflower (or however much you want)

Preparation:

To make this dish the most easily and to have it come out the best, three pieces

of equipment are very helpful:

- A food processor

- A microwave

- A covered (or fairly tightly coverable) microwave-safe dish

1) Process fresh cauliflower until it is the size of rice, either using the

plain steel blade or the shredder blade. Alternatively, you can shred it with a

hand-held grater, or even use a knife, if you have the dexterity to chop it up

VERY finely.

2) Microwave it in a covered dish. DO NOT ADD WATER. Cauliflower absorbs water

like crazy, and the " granules " will become gummy. To keep it fluffy, just let

the moisture in the cauliflower do its work.

Cauliflower Pizza Crust

***NOTE*** On the site it says use Mozzarella which is illegal. *** I have

subbed a legal cheese in the recipe below.

Cauliflower Pizza Crust

Ingredients:

1 cup cooked, riced cauliflower (see recipe above)

1 egg

1 cup Havarti or other tolerated cheese

1 tsp oregano

2 tsp parsley

Directions:

Preheat oven to 450 degrees.

Spray a cookie sheet with non-stick spray.

In a medium bowl, combine cauliflower, egg and cheese. Press evenly onto the

pan. Sprinkle with oregano and parsley.

Bake at 450 degrees for 12-15 minutes

Cauliflower Taco Shells (could make this into pizza crust)

1 16 ounce bag of cauliflower shredded, chopped or riced

3 eggs

3 cups cheese

1/2 teaspoon of salt

Preheat oven to 450 degrees F.

Grease 2 cookie sheets.

1) Cook or thaw frozen cauliflower. Shred, rice or chop. Mix with egg and

cheese. Using 1/3 cup scoop, make 12 6-8 " circles on greased cookie sheet(s).

Bake at 450 degrees for 12 minutes. Loosen and flip the circles. Bake for

another 5 minutes at 450 degrees.

2) Take hot patties and wrap around a rolling pin. When cool enough to handle

and with form, let cool on a rack for 6-8 hours in a cool oven. (To hold the

shape, if you have those stackable racks, you can inset the edges through the

racks of a cooling rack or your oven and allow them to hang down. They may curl

slightly. Don't panic! They should be still pliable enough the next day to open

without breaking).

Makes about 12 shells.

Cauliflower Bread or Pizza Crust

Ingredients

1 cup cauliflower, prepared (preparation explained below)

1 egg

oregano

Directions

1) to prepare the cauliflower, take a fresh NOT FROZEN cauliflower head and cut

the florets of and put them in a microwave safe bowl.

2) DO NOT ADD ANY WATER OR LIQUIDS! put in the microwave on high for 40 minutes,

mixing them half the way.

3) with a potato masher, mash the cauliflower, if is still hard, cook a little

longer in the microwave.

4) when completely cooked and finely mashed, measure a cup.

5) mix 1 cup of the mashed cauliflower, and the egg.

6) put on greased loaf pan making sure that it evenly distributed, sprinkle with

oregano, and bake at 450F for 20 minutes or until golden brown.

7) if using for sandwiches, let cool down before using, if using for pizza as

soon as out of the oven add your pizza toppings and bake until the cheese is

melted.
