The coconut milk still separates - which tastes fine once you mix it, but it would be nice to have it look a little more finished if I want to serve it for company. > Egg white? > Soy lecithin can work.. I don't have it on hand at the moment. I'm trying blending the banana into the milk to see if this works. > > Hope people have better suggestions. > > What kind of cocnut milk desert are you making? Espresso banana coconut panna cotta I'm working on a SCD recipe (advanced - because of the coffee). Unfortunately for me, this involves making it over several times until I get it right - and then eating the results. Real hardship! Guest guest
Nah, the problem which is visual - is the separation. Because canned coconut milk has stabilizers in it, but ours doesn't, like with the coconut yogurt. I'd like to figure out how to get that more polished look, whether in a small ramekin or glass or in a larger soufflé dish. We'll see. > Mara, > > Sounds Delish.. > Not that I am being much of a help- but maybe if the look doesn't work well for you- you can put it in a martini glass and make parfait style? > > Jodi > > >>>> >>>> Marilyn or anyone? >>>> >>>> I'm trying to think of something to keep coconut milk unseparated in a >>>> coconut milk gelatin desert. Real hardship! Yeah. Almost as hard as my experiments with dates and cocoa butter. — Marilyn New Orleans, Louisiana, USA Undiagnosed IBS since 1976, SCD since 2001 Darn Good SCD Cook No Human Children Shadow & Sunny Longhair Dachshund Babette the Foundling Beagle
