Guest guest Posted May 23, 2010 Report Share Posted May 23, 2010 I made the Hurricane Dressing and it was sooo good. I found the soya lecithin at the grocery store. I put what I thought was a tiny drop (I have these tiny measuring spoons that say dash, pinch, etc. and used the smallest spoon). I cannot taste anything now. I actually tossed it. So I'm going to re-make it adding the soy first, the olive oil, vinegar and spices on top. Either I used too much or it sat on top but you know, I'm a comedy of errors in the kitchen. I hope Marilyn has some ideas on this! That stuff is so sticky sticky, I could barely get it off the spoon to my finger so I may have overdone it trying to actually get some in the bottle. Btw, Marily, what type of bottles do you use? I used a cheap plastic squeeze bottle from either the 1$ store or Wal-Mart but I'd rather use glass with a lid for salad dressing. Not that I am being much of a help- but maybe if the look doesn't work well for you- you can put it in a martini glass and make parfait style? I honestly don't know if it would help in keeping the coconut milt together. You could try it. Didn't you say yours was 6oz.? What I do is put the vinegar in the bottle, add the spices, then the oil, then shake it, then add the lecithin, then shake again. Yeah, the lecithin is real sticky. <wry grin> I sorta use the Ray method of measuring, except I was doing it before she had a TV show. I take the lecithin, and put a small drip in the salad dressing.... you know, like RR's " once around the pan... " Er, I'm making about a quadruple or sextuple recipe at a time these days -- it goes in a quart milk bottle that I have. We go through a lot of it, 'cause not only do we like salads, my husband likes to drizzle it over ripe avocado slices. I also have a small plastic bottle that fits in my food case for when we eat out. Soy is not legal but from what I understand it's kind of like cocoa butter because it's only the fat from soy and nothing else. Marilyn or someone can explain it better. This is used in minute amounts--it takes very little. I use something smaller than I can get my little finger in to add to the Hurricane Dressing. It keeps the salad dressing together to pour. Debbie 41 cd BTW, I got it at Whole Foods. It will last a long time at this rate ;-). The dressing is good enough that I add to a lot of things for flavor.
