You could always just use raisins too, as most carrot salads use raisins.

Marilyn,Excellent idea. I put a bunch of cranberries in the freezer from this past Christmas and was lamenting the loss because of the move, but wondered about how tart they would be if dried. the half dry then soak and redry sounds perfect! You do know that cranberries freeze exceptionally well?

I haven't yet dehydrated any, but what I think I will try when I get

around to it is to partially dehydrate the berries, then re-hydrate them

in a solution of half-honey, half-water, and then dry them all the

way.

That's a real good question about the skins. My personal inclination

would be to try it both ways and decide which one works best for you.
