Guest guest Posted May 8, 2010 Report Share Posted May 8, 2010 Daddy's Gourmet Baked Cheese Omelet from Kaitlyn This is something that my Dad came up with that has turned out to be great!!! We hope you enjoy! It's fairly quick & easy for a Saturday morning (doubled). And it's faster when 2 people work together – one making the cheese sauce while the other does the egg mixture. Serve with some fruit or smoothie. Cheese Sauce 2 Tbs. butter 4 oz. of White Sharp Cheddar Cheese ½ cup SCD Yogurt 1 tsp. Honey Melt butter in small sauce pan. Turn to low and add cheese, stirring constantly. When melted, whisk in yogurt and honey. Turn off and keep on burner to stay warm. Egg Mixture 4 Egg Whites 4 Egg Yolks In one medium bowl, beat egg whites until stiff peaks form; set aside. In another small bowl, slightly beat egg yolks and add in ½ cup of the cheese sauce. Fold egg yolk mixture into the egg whites until combined. Spread egg mixture into ungreased 8 x 1½-inch pie dish. Bake in a 390º oven until puffy and browned on top, approximately 15-20 minutes. It will sink a little after a few minutes of cooling. Cut and serve with the warm Cheese Sauce on top or on the side. Makes 2 servings. -Kim K. Kaitlyn's Mom Kaitlyn, age 11 (12 mext month!!)
