Maybe this would be good on baked discs of butternut squash??SALMON STROGANOFF4-6 oz. Wild Salmon fillets2 Tbs olive oil2 cloves minced garlic1 large onion chopped1 1-1/2 oz low fat sour cream1 8.5 oz jar sundried tomatoes in olive oil½ tsp salt1/8 tsp pepper1 12 oz bag large egg noodlesIn a large skillet, cook Salmon in 1 tbs of olive oil about 5-10 minutes on each side or until center of salmon is fully cooked. Remove skin from salmon and discard. Place Salmon on plate and set aside. Place 1 tbs oil and onions in skillet and sauté until the onions are tender.Break fillets into 1/8 pieces and add to onions. Drain sundried tomatoes and chop into ½ inch strips. Add to salmon and onions. Add salt and pepper. Cook on medium for 20 minutes. Stir in sour cream and cook 2 minutes. Serve with salad.
