Guest guest Posted May 6, 2010 Report Share Posted May 6, 2010 Hello all. I've been on SCD for almost 6 months. It's going well so far. Lot's of my symptoms have decreased. With a recent blood test we recently found though that my cholesterol is low. I also don't have enough good fats in my diet. I'm really strict on the SCD. I eat eggs or homemade yogurt for breakfast, leftover meat and veggies or broth or Lara Bar for lunch, and meat, fruit, and veggies for dinner. Simple. Guest guest Posted May 6, 2010 Report Share Posted May 6, 2010 Pam,I would eat eggs AND yogurt at breakfast -- you could blend the boiled egg (or raw) in the yogurt and fruit to make a smoothie. Add good quality grass-fed cow butter to everything you can think of -- including soups and smoothies (unsalted, it makes them really creamy). Avocados and coconut oil are very good too. I add coconut oil to my tea and coffee (and smoothies) (in addition to coconut milk). In fact, a lot of times I use just coconut milk (no additional water) to make the tea (in a pan with loose leaves). Guest guest Posted May 6, 2010 Report Share Posted May 6, 2010 Quick Coconut Milk Recipe from " Eat Well, Feel Well " by Kendall Conrad, pg. 195 Makes 1 cup coconut milk Ingredients: 1 cup unsweetened coconut flakes 1 cup water Directions: Bring 1 cup water to a boil. Combine boiling water and 1 cup unsweetened coconut flakes in a blender or food processor and process until very fine. Strain through cheesecloth or fine sieve, pressing to extract all liquid.
