All the sources agree that there is very little to a trace of lactose in butter. The charts indicate that 1 tsp. of butter contains anywhere from 0.05 to 0.5 grams of lactose. That is a very small amount. I haven't seen anything listed in terms of a maximum amount of butter to be consumed. Like everything else, it is going to depend on the individual tolerance for fats. For example, I have a functional digestive disorder that requires me to keep my fat consumption down to around 5 grams per day total, and never more than 2 grams per meal. I can't have more than 1/2 tsp. of butter in one meal, can't use olive oil in a veggie dressing.... Many other people happily consume a lot more fat in a meal and within a day than I can. However, I have found that my body can react to certain brands of butter, even when the listed ingredients are nearly identical. I don't buy any that have coloring agents added; the kind I purchase just cream and salt. I have often discovered that when I stopped using a particular brand of butter in my muffins my reactions disappear. So you might need to do some testing. Kim M. I think, however, the control of the dairy business is quite thorough where I live (Denmark). Only cream and salt is allowed in order to call it butter, and getting an organic, good, quality is easy. So I don't really suspect any illegals. And I haven't noticed problems with fat intake like you (that must be hard!). I'm only around (pecanbread) stage 2 - even after 3 years - so my system is not nearly healed. I will have to look into different things. Thanks for input! I think that removes all remaining milk solids/lactose, and it's not too hard.
