If anyone has any remaining questions about whether Cocoa Butter is legal to

The latest craze - COCOA BUTTER

Cocoa Butter is pure fat extracted from the cocoa bean. For months there's been

discussions about this between the SCD list serves. Everyone was wondering

whether cocoa butter is SCD legal. The assumptions were that Elaine allowed pure

fat from milk (butter) & pure fat from corn (corn oil). The same should apply to

cocoa butter. However, some were afraid that Elaine would categorize this as

cocoa/chocolate which Dr. Haas had his reasons to prohibit. Since Elaine is no

longer with us, it's been declared that it's best to play safe and not use it.

Fortunately, Deanna saved the situation! Deanna was Elaine's close friend, and

is a very dear friend to us at Digestive Wellness. Deanna stated the following:

Elaine told me in a personal conversation that pure cocoa butter is legal.

Thanks to Deanna we SCD'ers can enjoy the taste of chocolate once again! Just

open a bag of cocoa butter (available at digestivewellness.com), smell it, and

you'll surely be overjoyed with the intense chocolate aroma - never mind the

taste!

For those of you new to the cocoa butter scene, cocoa butter is the main

ingredient in the chocolate industry. Think homemade SCD chocolate (cocoa

butter, honey, nut butter, and roasted nuts), chocolate flavored ice cream,

cocoa butter cookies... you name it. And no need to worry... I'm planning to

share the recipes with you in upcoming posts.

So... pop in a chunk of chocolate and back to the kitchen :)
