Well, if your daughter hates honey -- and hates the dates you're

considering as a substitute, that sort of puts a real crimp in your

style.

I think I might try making a date syrup -- pit the Medjool dates, chop

them, and put them and and equal amount of water in a small sauce pan.

Simmer for a few minutes, then cool slightly, and puree with a hand

blender. This may give you a consistency similar to honey.

You might also consider pear sauce -- peeled, cored pears, cooked down

(I'd use a double boiler) until very soft, and then pureed with a hand

blender. It will not be as sweet as honey, but it will give some

sweetness to whatever you put it in.

My husband hates hates HATES honey. But when i use it to sweeten cake or cookies, he doesn't notice the taste. Have you tried - is she that sensitive to the taste?

What about applesauce? I have used applesauce as a sub for oil and when I use applesauce instead of oil, I always decrease the amount of honey. So maybe just use less honey instead of taking it out completely?

btw, DH also hates dates, but his favorite SCD cake has lots of dates in it (a "brownie"). Go figure. I guess things taste a little different when they are mixed with other things and cooked, so you'll have to experiment. :)

Hi Lori. For what it's worth, I also hate the taste of honey, but I find that as long as the honey is mixed with something else, the taste is sufficiently disguised. For example, I don't taste the 1/3 cup honey I use in the BTVC recipe for cheesecake, but I'm sure the cheesecake would not be as good without the honey.

Several times, I've even made the butternut squash pie recipe from

which has honey in both the filling (I use 1/3 cup) and the topping, and managed to enjoy the results.

What about grape juice?  That is really sweet, the white grape juice or you'll have purple-ish food.  I also like the Knudsen's juice for gelatin without honey.

 

But, I love honey, especially with cinnamon.
