Guest guest Posted April 11, 2010 Report Share Posted April 11, 2010 Hi was wondering, spoke to a local butcher who swears he uses no sugars or starches on the deli meats including pastrami, turkey, salami, bologne and corned beef. My question is....can I eat it now? also, he showed me the factory where they smoke certain meats like turkey? I could prob ask him to show me them, would any of that be a problem. Also, whats cures? I'm not sure what you're referring to? He showed me smoking process and it seems to all be done by him. What questions should I ask?
