I had forgotten all about it as my dearest girlfriend who use to make it for me, retired about 5 years ago. This is a delicious and high protein meal for sure! If you happen to have a recipe for it, could I impose on you to share it? I will exchange with my favorite Mexican soup, Fideo or Albondigas! Hugs, Theresa P.S. It's low fat (haha, not like we'll need to worry about that) but it's loaded with chunks of chicken and it's quite nice. You can make it mild or spicey, depending upon your taste. Of course, it also has hominy - but that's optional for many. And, while a starch, I can't imagine a little bit (after the chicken) would be a big problem. I just had two of the best tamales last weekend when I was in San Diego...I got the card of the lady who made them to ship some up thiw way as they were divine! (Yes, I'm the one profiting here: two for one on my part!) You are in for it now!! When it comes to food, I miss the place where I was born and raised more than anything: Los Angeles. Here in Virginia, the Mexican food SUCKS! Even in D.C. (well, I only could find one place in -)it's not so good. You can't even really call it Mexican food. There's this place called Chi Chi's here in town--UGH! Anyway, I now have to make my own sopa and enchiladas, but I'm getting better at it. MMMMM, enchiladas <hear Homer Simpson's drooling voice>. CHICKEN SOUP WITH AVGOLEMONO SAUCE *Avegolemono is a staple in Greek food, used in soups and as a (HIGH PROTEIN) sauce for vegetables and meats.* INGREDIENTS: Avgolemono Sauce 2 eggs 3 Tbs. fresh lemon juice Chicken Soup 1 three pound chicken or equivalent in boneless breasts 2- 2 1/2 quarts water a few peppercorns 1-3 small carrots 1 large onion 1-3 stalks of celery salt to taste 1 cup orzo (rice-shaped pasta), rice, or kritharaki (I prefer orzo) DIRECTIONS: Wash chicken and place in heavy pot of water to cover. Add peppercorns, onion, celery, and carrots. Bring to a boil, cover, and simmer over low heat for about 2 hours, until chicken is tender. Add salt to taste during last hour of cooking. Remove chicken and keep warm. Strain and keep broth; discard vegetables and peppercorns. Add rice, or orzo, or kritharaki and simmer, covered, until rice or pasta is tender, about 15-20 minutes. Add avgolemono sauce (see below) and after soup is thickened, add as much sliced chicken as desired. Make the avgolemono sauce by hand or in blender: BY HAND: Beat eggs well and gradually beat in lemon juice. Add two cups of hot, strained broth slowly to egg sauce, beating constantly. Return soup to heat and stir vigorously until thickened. BLENDER: Blend eggs with lemon juice. With motor running, very slowly add 2-3 cups of hot, strained broth. When combined, pour egg- lemon mixture from blender into remaining broth, stirring briskly. After all the liquid has been combined, reduce heat and continue to stir until thickened. My father raises them and the smallest one I ever remember having was 23 pounds. It gives new meaning to what do with the leftovers. at least she won't be pawning them off on me this year.
