I saved beet leaves, carrot green leafy tops (lady at the store said she does this), hard asparagus tips and some other stuff to make veggie stock. My mom says it's going to be weird. Does this all go together or no...? I would recommend really researching carrot tops before eating them. Guest guest Posted April 27, 2010 Report Share Posted April 27, 2010 Hi Debbie, Easy trick: peel the beets after they're cooked. You can also boil them and save the water for putting in smoothies or whatever. We like to slice them and put on good olive oil, salt and pepper. I also make a mock goat cheese and beet salad by mashing olive oil and spices (s & P and whatever else looks good!) into farmer cheese and layering it w. beets over baby greens. Nice for guests! Re. the soup: well, it doesn't sound too goo to me but you were going to throw this stuff out anyway, right? So all you really have to lose is the 2 minutes to throw this in a pot w. wahter and turn the stove on. So try it and see how it is a few hours later! Maybe you'll discover a great new recipe for us all to share!
